Metrodo Classico Brut ELENA

This sparkling wine is a refined expression of elegance and patience, born in the hills of Costigliole d’Asti from Chardonnay and Pinot Noir vines grown on sandy, clayey and calcareous soils. The vineyards, averaging 10 to 25 years of age and trained according to the traditional Piedmont Guyot system, yield grapes of freshness and character. Harvested by hand, the Chardonnay and Pinot Noir are pressed and vinified separately, fermenting in stainless steel at controlled temperature for three weeks in order to preserve their purity and aromatic finesse. The second fermentation then takes place in bottle, followed by a long maturation of 30 months on the lees, which gives the wine depth, balance and complexity. After dégorgement, a small dosage of liqueur d’expédition completes its final expression. In the glass, it reveals a straw-yellow colour with golden reflections. The nose is broad and vinous, with an elegant aromatic profile that opens towards notes of candied citrus. On the palate, it is fine, delicate and intense, combining freshness with a graceful persistence. Versatile and sophisticated, it pairs beautifully with appetizers, semi-aged cheeses, canapés, savoury bites, fish soups, richly flavoured fish, boiled vegetables, seasoned pasta and risotto. Best served at 8° 10° C
