BARBERA D’ASTI DOCG “CIABOT D’LA MANDORLA”

Ciabot d’la Mandorla is a wine that truly embodies our vision of Barbera and stands as one of the most representative expressions of our production. Made from 100% Barbera grapes grown in the hills of Costigliole d’Asti, on sandy, clayey, and tufaceous soils, it reflects both the character of the vineyard and the identity of our territory. The vines, averaging 20 to 30 years of age and trained according to the traditional Piedmont Guyot system, yield grapes of remarkable quality and concentration. After careful selection and harvesting, the grapes are gently pressed and fermented in stainless steel tanks for about four weeks, with submerged-cap maceration at a controlled temperature of 28–29°C. The wine is then refined in stainless steel for approximately six months and rests in bottle for at least two more months before release. In the glass, it reveals a deep ruby red colour with garnet reflections. The bouquet is broad and intense, marked by elegant notes of almond blossom. On the palate, it is dry, structured and harmonious, with a distinctive and persistent finish reminiscent of fresh almond. With its depth and personality, it pairs beautifully with cured meats, mature cheeses, and red meat dishes, and shows its best when served at 18–20°C.
