Piemonte DOC CORTESE

This Cortese is a bright and refreshing expression of the variety, shaped by the hills of Costigliole d’Asti and by our commitment to preserving its natural elegance and vitality. Made from 100% Cortese grapes grown on sandy, clayey and calcareous soils, it comes from vines averaging 20 to 30 years of age, trained according to the traditional Piedmont Guyot system. After careful selection and harvesting, the grapes are gently pressed using a nitrogen press to protect their delicate aromas and freshness. Fermentation takes place in stainless steel tanks at a controlled temperature of 18°C, followed by three months of ageing in steel and at least one additional month in bottle. In the glass, it shows a straw-yellow colour with greenish reflections. The bouquet is broad and inviting, with floral and fruity notes accompanied by hints of green apple. On the palate, it is fresh, lively and well-balanced, finishing with the light, pleasantly bitter note that is typical of the grape. Versatile and easy to enjoy, it is excellent as an aperitif and also pairs beautifully with white meats, fish, fresh cheeses and pizza. Best served at 8–10°C.
