Monferrato DOC DOLCETTO

This Dolcetto is a genuine expression of the variety, shaped by the hills of Costigliole d’Asti and by our desire to preserve its freshness, fruit and drinkability. Made from 100% Dolcetto grapes grown on sandy, clayey and calcareous soils, it comes from vines between 10 and 25 years of age, trained according to the traditional Piedmont Guyot system. The grapes are carefully selected and harvested early, then gently pressed using a nitrogen press to protect their aromatic integrity. Maceration lasts for 6 to 7 days at a controlled temperature of 25°C, allowing the wine to develop its colour, softness and varietal character. Ageing continues in stainless steel for four months, followed by at least one month in bottle, preserving the wine’s vibrant fruit and natural harmony. In the glass, it shows a ruby red colour with violet reflections. The nose is intense and fruit-driven, with clear notes of red berries and cherry. On the palate, it is soft, harmonious and velvety, with the characteristic pleasantly bitter finish typical of Dolcetto. Versatile and approachable, it pairs beautifully with simple dishes, meats and cheeses, and is ideal throughout the meal. Best served at 18–20°C.
