after soft destemming, the fermentation takes place in 8-10 days with constant temperature control (max. 28-30° C), short but frequent pumping over and racking in about 10-12 days. Part of the maceration took place according to the carbonic maceration technique. The vinification, the malolactic fermentation and most of the aging (which also involves a passage in wood in tonneaux) take place in stainless steel containers in about 12-18 months.
