Sparkling Metodo Classico Pas Dosé - "Bolla Rina" (Rare Native Grape)

Owner - Winemaker at Daniele Cesca

Moncalvo, Piemonte, Italy

About

"Bolla Rina" is a radical expression of the rare Slarina grape. While Piedmont is famous for Alta Langa, we offer a completely unique alternative: 100% Slarina, grown at 305m altitude on the ancient 'Sands of Asti.'

Technical Profile:

  • Winemaking: Metodo Classico (Traditional Method).

  • Dosage: Pas Dosé (Zero Dosage) to maintain maximum purity.

  • Aging: 24-36 months on noble lees.

  • Philosophy: Zero Oak, Spontaneous Fermentation, Minimal Sulfites (<25mg/L).

Sensory Character: Intense verticality and freshness. The palate is dry, savory, and clean, featuring notes of wild herbs and mountain berries typical of the Slarina variety.

Ideal Partner: > Seeking importers and high-end HoReCa partners looking for "Discovery Wines" and authentic biodynamic sparkling alternatives.
