0.375 l bottle. The grapes, grown within the historic park walls of Castello di Azeglio in the heart of Canavese, undergo a natural drying process in a ventilated drying room (“passitaia”) for about five months. In March, the dried grapes are destemmed and gently pressed. The wine then ages for at least three years in oak barrels in the castle’s historic cellars before bottling and release.
Erbaluce di Caluso Passito displays an intense colour ranging from deep golden yellow to amber. The bouquet is rich and characteristic. On the palate it is sweet, harmonious and full-bodied yet velvety, with notes of honey, candied fruit and a delicate hint of oak. Ideal with aged cheeses such as Roquefort or Castelmagno, and perfect alongside traditional afternoon pastries like amaretti, torcetti, paste di meliga or canestrelli.
