About

The proposed oleogel is based on plant-based ingredients and contains no additives. It is obtained from vegetable oil, water, and legumes through a simple and easily reproducible three-step process. Its use has been tested in the production of two complex food matrices, including replacing 100% of the conventional fat in croissant-type puff pastry.
