About

Our Capocollo is a traditional specialty from Basilicata, recognized among Italy’s typical agri-food products. It is crafted from carefully selected cuts of heavy Italian pork, sourced exclusively from pigs born and raised in Italy, using the upper loin (boneless neck), a prized and flavorful cut.

The meat undergoes a traditional curing process with sea salt, spices, and natural aromas through a first salting stage, followed by manual massage and a second salting phase to ensure perfect seasoning and texture. It is then encased in natural casing and hand-tied with natural twine.

Slow natural aging allows for full maturation, enhancing aroma, balance, and complexity. When sliced, it reveals a ruby-red color interspersed with delicate pink-white fat marbling. The aroma is gently spiced and refined, while the flavor is smooth, slightly sweet, and elegantly persistent.
