About
I'm working as Assistant Professor in Turkey. RESEARCH INTERESTS Development of macro/micro- and nanoencapsulation systems for the protection of bioactive ingredients, their food applications, and improving nutritional quality and functionality, and determination of antioxidant activity, textural analysis, colour parameters, rheological characterizations and sensory properties. Convert food by-products to clean label foods. Extraction of the bioactive compounds/polysaccharides/proteins and characterizations. Bioavailability of foods and food components (In vitro digestion) Development of biodegradable packaging materials with improved properties and reduced environmental impact and characterization of these materials using Attenuated total reflectance (ATR) FT-IR, Scanning electron microscopy (SEM), X-ray diffraction (XRD), Thermogravimetric analyses (TGA) or Differential scanning calorimetry (DSC) and determination of mechanical properties, water vapour permeability, oxygen permeability, optical properties etc…;
