BRACHETTO D'ACQUI DOCG
Owner at Matteo Soria
Castiglione Tinella, Italy
About
Variety: 100% Brachetto
Harvest: late August – early September
Alcohol: 6% vol.
Colour: ruby red tending to light garnet
Bouquet: intense and aromatic, typical of the grapes, with hints of red fruit and rose
Flavour: sweet, aromatic, elegant and fresh thanks to a good acidity
Vinification: after a soft pressing of the grapes, the must is stored at low temperatures (-3°C). The fermentation in pressurized tanks lasts about four days after which the wine undergoes sterile filtration (to eliminate yeasts) and is, finally, cold bottled
Service temperature: 6-8° C
Pairing: sweet and dry pastries, fruit salads. Try it in combination with cured meats and cheeses
