Canelli DOCG Moscato

2023 marks the entry into force of the new Canelli DOCG, a young appellation with a long history, for a wine that's immediately good and well-suited to aging. No two vintages are the same, like our Bric, which changes color with each vintage, almost as if it were a collector's item.

Produced from Moscato Bianco di Canelli grapes, a native grape of the area, in a more limited area than Asti and Moscato d'Asti, and under more restrictive rules. The grapes come from the best plots, yields are lower (95 q/ha), minimum alcohol content 12%, and harvested strictly by hand. After gentle pressing, the must is clarified and kept sweet at a low temperature until partial fermentation in an autoclave using the Martinotti method takes place, reaching approximately 5% alcohol. From then on, it maintains its natural sweetness due to its own sugars and effervescence, a result of fermentation.

Crystalline, brilliant, and delicately effervescent, its straw-yellow color evokes the ripe grapes from which it comes, a relationship also found in its aromas and flavors. Aromatic bouquet, typical of the Moscato Bianco grape, intense, complex, and refined, with hints of citrus and acacia flowers, pear and yellow fruit, sage, and moss. With aging, it can evolve into aromas of ripe and candied fruit, vegetal, and minerals, and over time, the fresh floral-fruity aromatic notes give way to those of hydrocarbons, fresh spices, and balsamic notes. Effervescent and consistent, never cloying thanks to an extraordinary balance between sugar and acidity, which provides a sweet entry and a consistently fresh, intense, and persistent finish. When young, it is the ideal companion for dry pastries and desserts in general. It loves to experiment with unexpected pairings, even more so with the passage of time.
