HARVEST TIME: second – third part of September.
VINIFICATION SYSTEM: manual harvest, destemmed and then fermented on the skins in stainless steel tanks at controlled temperature for about 8-12 days at 27-28 ° C, during the second part of the fermentation we increase the temperature to have more colour and structure.
During the maceration process 2 remontage per day for 20/30 minutes.
AGING: 15 -18 months in barrique and tonneaux and subsequent assembly before bottling.
REFINING IN BOTTLE: minimum 6 months.
CHARACTERISTICS: It has an intense purple-red color, dense and impenetrable, complex aromas of ripe red cherry, red berries, spices and vanillas. On the palate it invokes the aromas of the nose with a balanced acidity, soft tannins and an elegant, lingering finish. It has an alcohol content of not less than 14% vol. Serve at a temperature of 18-20 ° in combination with roasts, braised red meats in general and aged cheese.
AGING POTENTIAL: from 5 to 15 years.
