The TU Dublin School of Culinary Arts and Food Technology offers education, training, and research for the culinary, food, beverage, and hospitality industries. This reserach team currently works on the PANTOUR project, an Erasmus+ funded initiative (2022–2026) involving 13 organisations from 10 European countries. Their role includes conducting both quantitative and qualitative research to develop sustainable and inclusive strategies for the tourism and hospitality sectors. This work involves creating skills intelligence tools, carrying out country-specific research on digital, green, and social skills, and designing educational toolkits focused on sustainability, equality, diversity, and inclusion. At the policy level, the team is contributing to the development of the Skills Strategy and Action Plan for the European Tourism and Hospitality Sectors (2026–2036), which aims to guide training and skills development throughout the EU.

About me

My name is Fernanda Vergara, and I am a Researcher at the School of Culinary Arts and Food Technology at Technological University Dublin. My academic and professional journey has centred around exploring the intersection of market research, policy, and the hospitality and tourism sectors. I am particularly passionate about sustainable gastronomy and the role it plays in shaping more responsible and inclusive food systems. 

Currently, I work on the Erasmus+ funded Pantour Project, which brings together 13 partners across 11 European countries. My role involves both quantitative and qualitative research aimed at developing sustainable and inclusive strategies for the tourism and hospitality industries.
