Granciara: A Rare Organic Treasure

Our Granciara Extra Virgin Olive Oil originates from centuries-old trees in the heart of the Granciara Grand Cru in Montenero di Bisaccia—a land of excellence in Molise. This monocultivar is the result of a special selection of indigenous Cerasa di Montenero olives. The name "Cerasa" itself derives from the olive's cherry-like shape, standing as a testament to a deep and unique bond with the land. Today, only a few of these ancient trees remain across the entire region, making our Monovarietal Cerasa Montenero a true treasure of rarity and tradition.

Sensory Profile

With its straw-yellow color and fluid consistency, Granciara reveals itself as a refined and complex oil:

  • On the Nose: Delicate scents of freshly cut grass emerge, followed by almond-like undertones and the fresh, citrusy notes of lemon thyme.

  • On the Palate: A surprising experience where the bitterness of eggplant blends with a spicy touch of ginger and sweet paprika, leading to a harmonious, never overpowering finish.

  • Pairing Tip: Its extraordinary versatility makes it ideal even for bold pairings, such as drizzled over vanilla or pistachio gelato.

Craftsmanship & Sustainability

We harvest our olives by hand using electric shakers. This method contributes to environmental sustainability by reducing pollution compared to traditional machinery. The olives are cold-pressed within 12 hours of harvest. This rapid process ensures maximum quality and preserves all organoleptic properties, resulting in an oil that is fresh, flavorful, and richly aromatic.
