In recent years, we have chosen to characterize our rosé production as single-varietal, using the technique we have always employed for our Metiusco: the saignée method. Egocentric Primitivo Rosé undergoes cryomaceration and, after the saignée, ferments in small stainless steel tanks. We carefully control the temperature throughout the fermentation process, keeping it around 15°C, which makes the process significantly longer. The result is an exceptionally fresh wine, distinguished by the typical aromas of Primitivo.
