About
Metiusco Rosato represents the pinnacle of this grape's excellence in its rosé version: it is obtained by bleeding, after the crushed grapes undergo cryomaceration for approximately 10-30 hours; this process allows the color and aromas to be extracted through the action of cold. Thirty percent of the must is separated by gravity and then fermented in stainless steel. The result is a wine rich in red fruit (raspberries and cherries above all), flowers (roses and violets), and citrus (light orange zest). On the palate, it is savory, dry, and concentrated, with an ethereal yet impactful personality. Pairings: It's also perfect with white meats, but in general this wine pairs particularly well with vegetable-based first courses using fresh or pureed tomatoes, and with fish and shellfish stews. Catalan-style lobster, for example, would be perfect. It's also excellent with pizza.
