 PRODUCTION:

Area: plot of Manduria, Sava and Lizzano  in the county of Taranto, Salento, Apulia

Grape variety:100% Primitivo

Training system: Apulian alberello

Vineyard age:over 60 years

Grape yield per hectare:50q

Harvest: manual, with careful selection of the grapes, slight drying on the plant

 VINIFICATION:

destemming, gentle pressing of the grapes, maceration with skin contact for 10-12 days, fermentation at a controlledtemperature not exceeding 20°C, 12 months oaking in american and  french barriques and approx. 12 months of bottle ageing.

 TASTING:

Colour:deep ruby red with light garnet reflections.

Nose: enveloping, intense, with floral notes of violet and fruity notes of blackberry, raspberry, sour cherry, plum jam and pleasant spicy nuances of Mediterranean scrub, cinnamon, white pepper, chocolate and gentle vanilla finish.

Mouth**:**the soft warmth of Primitivo enters the mouth with soothing sweetness, balanced by good acidityand long finish with delicate vanilla notes.

Pairings**:**aged cheese,traditional Apulian pastries with almonds, walnuts, pistachios, hazelnuts. Served fresh it pairs nicely with summer fruits.
