Hand-harvest in perforated crates with careful selection of the best bunches. The grapes are destemmed and crushed and the must is transferred to stainless steel tanks.

Fermentation started by inoculation of pied de cuve with indigenous yeasts and maceration on the skins for less than a week.

Pumping over and punching down carried out daily. Malolactic fermentation carried out.

Aging for 6 months in stainless steel tanks and at least 6 months in the bottle.

Bottled without any filtration following the Biodynamic Calendar.

Serving temperature: 16 - 18°
