About
Manual harvest and selection of small clusters from the least productive vines in our vineyards. Fermentation takes place in Allier oak vats for 13 days, at temperatures between 25ºC and 30ºC. Aging for 24 months in new French oak barrels (from various coopers) and American oak. Afterward, the wine rests for 5 years in bottle storage. It is bottled without any type of filtration. From this wine, 0.75L bottles have been selected. 12,800 bottles.
