About
The grapes used to produce this wine come from two small plots located in the La Rad area, in Albelda de Iregua. These plots, with a planting density of 1.30x1.30 meters, are over 80 years old, with a yield of less than 1 kg per vine. The Viura grapes were harvested first in 13 kilogram crates, undergoing a double sorting process, first in the vineyard and then at the winery. After crushing, the pomace was transferred to the press under an inert atmosphere, where it remained for 24 hours macerating. After this period, the free-run juice was bled off, without pressing, into a stainless steel tank, where it was clarified through cold settling. Once the fermentation began, the clear must was racked into another tank, and whole Garnacha Tinta grapes were added, without destemming. Fermentation occurred spontaneously, using indigenous yeasts. Over 23 days, the fermentation took place in stainless steel at a controlled temperature of 15°C. After fermentation, the wine was bled off and transferred to barrels, where it aged for 20 months.
