About

From our best vineyard plots located in the Valle del Alto del Najerilla and Iregua, we manually select the grapes to produce this wine. Upon arrival at the winery, a double sorting process is carried out, first by clusters and then by individual berries. The selected grapes are crushed and transferred to stainless steel tanks for fermentation. Forty-eight hours later, the free-run juice is separated without pressing, allowing it to ferment and age on its fine lees. The wine is aged for 14 months in new American and French oak barrels, after which it is transferred back to stainless steel tanks to complete its aging process. Finally, the wine undergoes a 15 month bottle aging before release.
