In the agri-food sector, the study of stable element isotopic ratios (C, N, O, H, S) using Isotope Ratio Mass Spectrometry (IRMS)is a useful tool for obtaining detailed information about products within this industry. This analytical technique enables the identification of geographical origin, fertilization practices, and even the climatic conditions under which products are cultivated. Its wide range of applications allows the scientific community, in collaboration with the primary sector, to promote the authenticity and added value of agricultural food products. All of this takes place within the framework of sustainable production and the circular economy, aiming to enhance the traceability, integrity, and competitiveness of agri-food products.
