We use only local organic fruit and organic citrus fruit from our neighbor's Mediterranean garden. And what else is in it? Just a drop of honey and nothing else. This serves as a nutrient for the good bacteria. Our fermented fruits have high bioavailability because they are free of additives and, in particular, sulfites.
