VINES/HECTARE: 4500 vines per hectare.
PRODUCTION AREA: the vines are grown in the area of Brindisi, about 150 meters above sea level, with high average temperatures and low rainfall. The soil is composed of a medium deep mix of topsoil and clay, with a substantial content of skeleton
HARVEST PERI OD: The middle of October
VINIFICATION: thermo-controlled maceration for approximately 7 days followed by alcoholic fermentation with selected yeasts at 24°C.
AGEING: in stainless-steel tanks for 1 year and a half, then in French oak barriques for at least 6 months.
ORGANOLEPTIC CHARACTERISTICS: ruby red dark and full, characterized by very soft tannins and its persistent flavor with a red orange aftertaste. At smell it has fiorai aroma, ripe rose and ton es of mature red fruit and black cherry with a light touch of liquorice. PAIRINGS: soft tannins make it excellent with red meat, game, aged cheese and cured meats.
SERVING TEMPERATURE: Between 16-l 8°C.
