For white wines, too, the winery focuses on native varieties: Malvasia Bianca and Verdeca. Metiusco Bianco is the flagship Verdeca wine from Palamà: it is vinified in steel and also aged in the bottle.
This grape contains a small percentage of Malvasia Bianca, a variety that, according to Trinci (1726), may have arrived in Italy from Greece or the Balkans in the Middle Ages.
Ninì allows it to overripen on the vine and then subjects it to maceration and fermentation in oxygen reduction, resorting to frequent bâtonnages (bâtonnages consists of stirring the wine mass so that the finer lees do not settle at the bottom, which would favor the subsequent development of unpleasant odors due to sulfur – but rather increase the structure and aromas of the wine).
