PRODUCTION:

Area: Salice Salentino, Salento, Puglia

Grape variety: 100% susumaniello

Training system: spurred cordon

Vineyard age: 10 years

Grape yield per hectare: 90 quintals

Harvest: manual, with careful selection of the grapes, carried

in 20 kg boxes

VINIFICATION:

Fermentation at a controlled temperature for two weeks

in steel tanks, malolactic fermentation and short

ageing period in French and American oak barriques

TASTING NOTES:

Colour: deep red with violet reflections

Bouquet: it has a longlasting aroma, characterised

by an intense fruity base with blackberry at its core,

enriched by delicate spices

Taste: it is enveloping, with mild acidity and a good finish

Food pairings: for all courses, excellent with cheese and

cold cuts

Serving temperature: 18-20°C
