PRODUCTION:
Area: Salice Salentino, Salento, Puglia
Grape variety: 100% negroamaro
Training system: spurred cordon
Vineyard age: 20 years
Grape yield per hectare: 70-80 quintals
Harvest: manual with careful selection of ripe grapes
VINIFICATION:
Destemming, gentle pressing of the grapes, with the “tear”
method, followed by partial racking of the must after a few hours of maceration.
This is followed by white fermentation and a brief passage in barrique.
TASTING NOTES:
Colour: pale pink with purple hues
Bouquet: intense and persistent hints of raspberry
and cherry, with a hint of rose hip
Taste: medium bodied wine, fresh and balanced
Food pairings: seafood first courses, fish soup, medium aged
cheese
