About

IFV (French Wine and Vine Institute) is the French technical institute of R&D for vine and wine and is governed by a board members representing all professionals of the wine industry (including farmers).

IFV implements and maintains a conservatory of microorganisms linked to vine and wine. The conservatory contains a collection of 50 0000 yeasts, 16 000 bacteria, and 12000 filamentous fungi isolated in the vineyard’s environment. IFV coordinates a national network on fermentation of wine and distilled products (RMT Quadiferm) grouping the wine, beer, cider and cognac beverage industries.

IFV is particularly interested in participating in a microbiome resource center, as micro-organisms are essential in the wine making process, and also for the interactions in the vine protection and production.

The different R&D topics at stake are :

  • Microbiome present in non-alcoholic wines (risk of development of microorganisms of oenological origin and also pathogens)

  • Study of the genetic and phenotypic evolution of the microbiome in the context of climate change. Importance of its conservation.

  • Study of the risks of microbiological deviations in wines in the context of climate change (changes in pH, sugar content, etc.)

  • Impact of cultivation and oenological practices on microorganisms.
