About
Our innovation challenge is centered on integrating advanced artificial intelligence technologies and modern industrial organization principles into the labeling and packing section of our cured meats production. This stage of the process plays a strategic role in our operations, as it connects production with logistics, customer service, and inventory control.
One of the main challenges is workforce planning. The labeling and packing area is highly sensitive to demand variability, product formats, and seasonality. We aim to use AI-based forecasting and optimization tools to better align personnel planning with actual production needs, improving flexibility, reducing idle time, and minimizing operational stress during peak periods. This includes optimizing shift allocation, task distribution, and skill-based assignment of workers.
Another key aspect is stock management. Managing labels, packaging materials, and finished products requires precision and real-time visibility. Our objective is to implement intelligent stock management systems capable of predicting needs, reducing excess inventory, preventing shortages, and improving traceability. AI-driven analytics will allow us to make data-based decisions instead of reactive adjustments.
Productivity improvement is also a central pillar of this challenge. By analyzing process data, cycle times, error rates, and bottlenecks, we seek to redesign workflows and layouts to increase throughput while maintaining quality and food safety standards. Automation and decision-support systems will be evaluated where they add real value without compromising our artisanal identity.
Ultimately, the challenge is not only technological but organizational. It involves change management, employee engagement, and the integration of digital tools into a traditional food production environment. Our goal is to create a more efficient, resilient, and scalable labeling and packing operation, using AI and industrial organization as enablers, while preserving the craftsmanship, quality, and authenticity that define our cured meat products.
