Dona Cuca cheese rolls were created a long time ago, in Brasília, but they came from a typical Minas Gerais recipe. When I was 15 years old, I tried the cheese rolls made by my friend Dona Nádia, the mother of some friends of mine. I asked her to teach me how to make it, and she did it so perfectly that I was able to please the most demanding palates in a short time. From that wonderful recipe (yes, because if it weren’t like that I wouldn’t have asked her!) I began the art of making cheese rolls, initially just for my family. When I got married, in 1985, I started making it for friends too. I then realized that there was already a legion of friends who enjoyed the recipe. Feeling very motivated, I started making versions with different fillings. It was an immediate success! These little rolls, which have already crossed the ocean, continue to be made with a lot of love, but each day they receive a special touch. And that is what makes them the most sought-after cheese rolls. Today they are made on a larger scale, but without losing their completely artisanal character, both in the preparation of the dough and in the rolling, one by one, filling by filling.
