HISTORICAL AND CULTURAL ORIGIN OF THE WINE: The production of Grignolino begins in the eighteenth century, in the ancient area where it is still produced today. The name of the grape variety may derive from the dialect Grignola, referring to the seeds typical of this variety, or from the verb grigné, that is grinding, because of the sour taste that makes teeth grinding. The grandfather of Pope Francis I grew this variety of vine, in Asti. He had the opportunity to taste this wine in Buenos Aires, during the visit of the association “Piemontesi nel mondo “. Pope Francis has always mentioned his connection with wine and vine, so much that there is a grape cluster in his coat of arms.

CULTIVATION TECHNIQUE: organically grown grapes, cultivated in harmony with the natural environment, without the use of herbicides, chemical fertilizers and other chemical products, certified ICEA

HARVEST AND PRODUCTION
**These grapes, typical of Asti, give rich and unique aromas. In the Monferrato Hills the grape harvest is in September. Fermentation take place in stainless steel tanks at 25ºC, with a total steeping period of 10 days. Malolactic fermentation take place naturally, adding complexity to this Grignolino; the wine is bottled young to preserve its aromas.

**POTENTIAL AGEING
**100% of the wine is aged in tank for 4 months. Potential ageing: 2 to 4 years.

THE WINEMAKER’S COMMENTS
A clear ruby colour with intense aromas of red fruits like cherries, strawberries and other berries. On the palate the wine has intense fruity flavours, good structure, medium body and a soft, lingering finish.

Try it with roasts and steaks, hearty casseroles or stews, grilled vegetables, pasta dishes, salami, cheese soufflé, kebabs, meatballs and ratatouille.
