Microbial ecology and omics approaches for sustainable fermented food systems
About
I am Assistant Professor and researcher in Food Microbiology at the University of Parma (Italy), with expertise in microbial ecology, molecular microbiology, microbiome analysis, and sustainable agri-food systems.
My research focuses on the diversity, dynamics, adaptation, and functionality of microbial communities across food and agricultural ecosystems. I investigate microbial interactions in dairy and plant-based fermentations, as well as the role of microbiomes in soil health, plant performance, and sustainable agricultural production.
I combine culture-dependent and culture-independent approaches, including metagenomics, microbial community profiling, molecular identification, and microbial physiology studies, to explore complex microbial ecosystems and develop innovative bio-based solutions.
I currently coordinate and participate in several national and international research projects addressing microbial biodiversity, sustainable fermented foods, plant-based fermentations, circular bioeconomy, agri-food by-product valorisation, and microbiome-driven innovation. My recent research also includes the development and assessment of fermented bio-based products, microbial biostimulants and biostimulants aimed at improving crop performance and resource efficiency.
I can contribute to MSCA Doctoral Networks with expertise in:
• Food and soil microbial ecology
• Food, plant and soil microbiomes
• Fermented food ecosystems and microbial consortia
• Lactic acid bacteria biodiversity and physiology
• Metagenomics and omics approaches for microbial ecosystems
• Circular bioeconomy and agri-food by-product valorisation
• Dairy and plant-based fermentations
• Fully equipped microbiology laboratory
• Access to highly automated greenhouse facilities
I offer expertise and facilities for microbiological, molecular and microbiome analyses, experience in interdisciplinary research and student supervision, and strong collaborations with industrial stakeholders, PDO food consortia, and agri-food innovation networks.
I am interested in joining Horizon Europe MSCA Doctoral Networks focused on microbiome-driven innovation, sustainable food systems, soil health, microbial biotechnology, circular bioeconomy, sustainable agriculture, fermentation science, and next-generation bio-based solutions for food and farming.
