The identified oil mill is UPAL Cooperative, located ın Cısternıno – province of Brindisi, the heart of Itria Valley. The UPAL Cooperative was established in 1956 when 22 producers, gathered on a warm August day, decided to give dignity to their work and the right valor to their products. Since then we are now more than a thousand members, all of us with the same goal of creating a dynamic cooperative reactive to the economics and our territorial needs.

The wonderful Itria Valley allowed us to create flourishing vineyard and olive groves unique in their variety. The soil is characterized by its classic red color given from the residues of dissolution of clayey rocks, composed by oxides and hydroxides of steel and aluminum.

Among UPAL’s productions there is also an excellent and inimitable extra virgin olive oil. This oil is obtained exclusively through the pressing of carefully selected olives harvested from the olive trees grown in the territory of Cisternino: Leccino, Coratina, Oliva Rossa area the most important cultivar.  The processing takes place following carefully the traditional techniques, using also innovative systems, guaranteeing a quality and hygiene greater than systems used in the past.

This advanced processing technologies are essential for the organoleptic enhancement of the characteristics, not altering the excellent healthy and nutritional features of the oil. Our extra virgin olive oil has a unique green and gold color, with a typically strong taste, almond flavor notes and a delicate fruity aroma. These characteristics makes it one of the best national extra virgin olive oils. The identity of the cooperative is linked to the production of IGP OLIO DI PUGLIA multicultivar and to the production of monocultivar extravirgin olive oil  Leccino, Toscanina, and Oliva rossa. The oil is produced from the PIG olive groves of our members, between the Itria Valley of the Cisternino area and the nearby plain of secular olive trees. The activity of the mill, and also all agricultural activity, are dedicated to high-quality production: every step cared for meticulousness and dedication to maintain the best quality standards.
