I'm Sonia, a fundamentalist and organic farmer. Together with my family, we care for our land, where we grow vegetables, fruit, olives, and grains. We grow our grains from seed. Through crop rotation, we respect the soil's natural cycles. The grains are harvested, selected, and stored to be used both for internal processing and for reseeding the following season. We produce:
Flour: Selected wheat from our farm, processed in a stone mill. The whole-grain milling produces a rustic flour, rich in fiber and minerals, containing bran and germ.
Dried pasta made exclusively with Senatore Cappelli durum wheat grown on the farm. The pasta is prepared periodically to ensure a consistently fresh product.
100% bronze-drawn, slow-drying.
Extra virgin olive oil produced exclusively with olives harvested on the farm. The olives are harvested and processed within 48 hours of harvest. Cold extraction.
Services: Processing Laboratory - Where technology and craftsmanship meet. In our processing laboratory, we produce preserves and semi-preserves, using raw materials available on site. This way, we can effectively combat food waste and close the production chain. We offer our laboratory to anyone who wishes to create their own product line. Customizable recipes and no minimum order quantity required.
