  • The Viognier grapes are gently pressed and allowed to ferment at a controlled temperature of 12-14°C in steel containers. After pressing, the Viognier undergoes skin maceration for about 12 hours before fermenting in steel. Following 4 months on the lees, the Viognier is bottled and left to mature in the bottle before being released to the market.
