About
Sake Lite™ is a UK-developed compact, low-temperature system for on-demand alcohol reduction in still beverages such as sake, shochu and whisky.
It combines ultrasound pre-conditioning with mild vacuum separation to remove ethanol gently while preserving aroma and flavour.
Operating at only 10–20 °C, it offers a high-quality, energy-efficient alternative to heat or membrane methods.
The project is being prepared for the UK–Japan Eureka GlobalStars programme and seeks a Japanese manufacturing or R&D partner with expertise in beverage or process-equipment design.
FISH Innovation Ltd will provide the scientific concept, modelling and prototype design; the Japanese partner will lead engineering development, regulatory compliance and commercialisation.
The collaboration would be co-funded by Innovate UK and NEDO.
Expected outcome: proof-of-concept prototype and validated process within 12 months, followed by commercial demonstration units for the hospitality and beverage sectors.
