The Ingredients, Foods & Processing team at AZTI is committed to improving the way food is designed, produced, and consumed. With a strong foundation in food science, nutrition, and consumer understanding, the team works across multiple areas to support a more responsible and health-focused food system.

Their work includes:

  • Food structure and processing, focusing on how ingredients interact, how textures are formed, and how nutrients are delivered effectively.

  • Formulation and optimization, using data and AI-modeling to refine recipes and improve product performance.

  • Experimental kitchen and pilot plant, where new equipment and cooking methods are tested and validated, including technologies like microwave, high-pressure processing, co-extrusion, and laser treatment.

  • Sensory and consumer labs, to explore taste and to ensure products meet expectations and dietary needs.

The team has developed a range of innovative products, such as plant-based meals, protein-rich snacks, and reduced-sugar bars. They also lead and contribute to major European projects like GIANT LEAPS, IMMUGOLD, and TITAN, and organize international events such as the Food4Future World Summit.

With over 1952 indexed publications and a multidisciplinary team of 280 professionals, AZTI continues to drive impactful research and development for a healthier, more sustainable food future.
