About me

I'm a PI at Braude College of Engineering, leading the food engineering track within the Biotechnology Department. My research focuses on food science and technology, and I'm particularly interested in colloidal systems, alternative proteins, sugar replacement strategies, digestibility assessment, dietary fibers, and food waste valorization. I’m passionate about sustainable food innovation and the circular economy, and I’m always open to interdisciplinary collaborations.
