TSIPOURO OF TYRNAVOS FAMILY KARDASI

About

The Kardasi tsipouro from Tirnavos is produced from grapes coming from our privately-owned vineyards. There we cultivate

the “black muscat”, a grape variety with rich characteristics and

distinguished aroma, thriving only in the region of Tirnavos. The grapes are brought into the winery only after a thorough monitoring and sorting are conducted.

The production is carried out in modern opper stills under the double distillation method.

The 100% natural grape distillate is slowly distilled at a controlled temperature.

The first fractions of the distillation (heads) and the last ones (tails) are removed and separated out from the main distillate.

The total main distillate is redistillated at a low temperature.

The final distillate is collected and stored in stainless steel tanks for a few months, in order to be homogenised and acquire balanced aromas.

Then, it is diluted at a desired temperature, filtered and bottled.

The Tsipouro without anise is the distillate, in which the aromas of the grapes used for its production can be easily recognised.

In this particular tsipouro, the aroma of the black muscat and the aromas of blossomed rose, caramel and butter can be highly distinguished. Its taste is soft and fruity. It is consumable without water at 12-15°C, accompanied by traditional Greek delicacies (meat, pickles and spicy salads).

As regards the Tsipouro without anise, the anise and fennel seeds are added in it in the second stage of the redistillation. In this tsipouro dominates the aroma of anise, leaving a light tingle on tongue and a sweet aftertaste. It is served with cold water or ice cubes, accompanied by cool Greek salads and seafood.
